Butternut Squash Soup


  • 1 butternut squash peeled and cut into hunks
  • 1 box organic chicken or vegetable broth
  • 1 onion, chopped
  • Olive oil
  • Fresh ginger root, 1 to 2 heaping tsps, chopped fine
  • Salt and pepper


Sautee onion in oil until soft. Add squash and broth. Simmer until tender. Add ginger and salt and pepper. Blend until smooth (a stick blender is perfect for this, or transfer batches to a blender.)

Taste and add more ginger, salt and pepper if necessary.
