David's Pasta with Summer Vegetables


  • 1 to 2 cups halved cherry tomatoes
  • 1 cup chopped basil
  • 1/2 cup chopped parsley
  • 1 cup cubed summer squash
  • 1 cup cubed eggplants, OPTIONAL
  • 1 cup red or yellow bell peppers, cut in slivers
  • 2 large cloves garlic, minced
  • 3 T pesto sauce, optional
  • 1 lb penne or other pasta - RICE ONLY for Blood Type O
  • 1/4 cup olive oil
  • 1/2 tsp. hot pepper flakes
  • 1/2 tsp salt or more to taste
  • Parmesan cheese, freshly grated


Sautée squash, eggplant and peppers with garlic, salt and hot pepper in olive oil until tender. Cook pasta. Toss pasta with cooked vegetables, raw tomatoes and herbs. Check for seasonings and add a dollop of pesto if desired. Serve immediately with Parmesan cheese.
