Garlic Scapes

These flower stalks of the garlic plant are milder than garlic cloves but still bring that full garlic flavor to recipes both cooked and not. Every bit can be used, chopped, in any recipe that invites garlic, such as stir fry, soups, salads, pesto, or sautéed greens.

Garlic Scape Pesto

  • 1-bunch garlic scapes (about 10 scapes)
  • 1/2 cup olive oil
  • 2 cups of fresh parsley and/or cilantro leaves
  • 1 cup grated Parmesan cheese
  • 3/4 cup sunflower seeds, walnuts or pinenuts

Puree garlic scapes in a food processor. Add parsley, cilantro and oil. Puree again. Add cheese and mix, adding additional oil if necessary to blend. Stir in sunflower seeds or other nuts. Taste and add salt as needed. Mix into warm pasta or use as a spread for bread.

Variation: In place of parsley/cilantro add basil or any other herb or green that you have on hand. Spinach and arugula are nice additions.

Grilled bread with Scapes

  • Good crusty bread for grilling
  • Olive oil
  • Goat cheese
  • Garlic scapes
  • Chives
  • Salt & pepper

Lightly brush both sides with olive oil. Grill or broil both sides lightly. Spread a covering of goat cheese. Sprinkle generously with thinly sliced scapes, chopped chives, salt & pepper and serve.
