Spring Stir-Fry


  • Asparagus (cut in 1" lengths on the diagonal)
  • Onions, green onion tops (in 1" pieces)
  • Strips of red peppers
  • Garbanzo beans
  • Braising greens (optional)
  • Olive oil & soy sauce.
  • Rice or pasta
  • Extras: toasted sesame oil, hot pepper oil, slivered almonds


Sauté sliced onions in olive oil until translucent. Add asparagus and optional greens and stir briefly, followed by peppers. Green onion tops and cooked garbanzo beans go in last. Stir in soy sauce and hot pepper oil.

This is great with rice (brown or white), but would also be excellent with buckwheat noodles.

Substitute other protein for the garbanzo beans, such as cooked chicken, prawns or scallops.

Serve with extra soy sauce, hot pepper oil and slivered almonds./p>
